Restaurants Canada Show - Feb 28, 29, and March 1, 2016

Tea and Herbal Association of Canada is excited to be participating in a new way at this year’s Restaurants Canada Show. A lot is changing and we think that this year’s activities will help keep tea at the top of visitors’ minds. Over the three days we are going to be engaging in and leading the following activities:

  • Daily Afternoon Tea with pastries and cakes
  • Four Star Tea Grading Demonstration
  • Cooking with Tea
  • Tea & Coffee Industry Leaders Panel Discussion

Sunday, February 28 (3:00 – 3:30pm on Main Stage)

Cooking with Tea: Modern “Afternoon Tea” Bites

Chef Jesse will be putting a modern twist on classic afternoon tea snacks using a different tea for each recipe!

Menu: Devilled Orange pekoe “stained” eggs, Lapsang Souchong cured Trout & buckwheat and Cucumber & Green Tea Quark steamed buns

Chef Jesse Vergen

Chef Bio:

Jesse Vergen is a passionate chef based in New Brunswick. He has made his mark by utilizing New Brunswick’s untapped bounty of small farms and fishermen as a base for his craft. Jesse was raised on a small organic farm in the Fundy Hills and now resides on his family farm with his wife and 3 children. Produce from Jesse’s farm is readily consumed by the hungry diners of the Saint John Ale House (“39th of TOP 50 in Canada” Vacay.ca), Smoking Pig BBQ, and Cleaver Catering where Jesse and his team deliver local flavours and unpretentious dining. Jesse’s life is all about food – whether he’s in his kitchens, on his tractor, or hunting coastal marshes, flavour is always first on his mind.

Jesse is the first NB competitor on the Food Network’s “Top Chef Canada.” He is the breakout star and fan favourite of Season 4. Jesse has been featured twice on the network’s award winning show, “You Gotta Eat Here.” You can also see Jesse as one of the contributing chefs in Michael Smith’s Documentary, “The Village Feast”.

Jesse has also been featured in many newspapers and magazines, such as: Intermezzo, Globe & Mail, Maclean’s, Readers Digest, Air Canada’s Enroute, Chatelaine, Canadian Living, East Coast Living, Tidings, Taps Beer, Buze, and various online blogs. His social media feeds are a must follow for foodie entertainment and the epicurean buzz.

Four Star Tea Grading: Slurp Spit & Make $

The Tea and Herbal Association of Canada’s Tea Tasters will demonstrate how you can identify a quality tea. Your customers will be coming back for more, and your till will be ringing.
